In an effort to show how you can follow AIP and still enjoy the season's best offerings, we are presenting Countdown To Thanksgiving. A series of recipes that can be enjoyed by those on AIP but also shared at holiday time with no feelings of deprivation!
I have been seeing this recipe around in different formats. I think it is so beautiful and easy, I had to make an AIP version. Cauliflower is inexpensive and available year-round. I choose a cheddar cauliflower which is a beautiful yellow color. I used three cloves of garlic and a tablespoon of sage and heated it up in olive oil to infuse the oil with flavor. Then I spooned the oil on top of the cauliflower and baked on a cookie sheet for about 90 minutes. The result was a partially caramelized, crispy coating with a tender interior. I would definitely served this whole on the table, and cut it into servings after everyone had a moment to appreciate how stunning it is. An incredibly easy but stunning vegetable side dish.
- 1 head cauliflower
- 3 Tbls Olive oil
- 3 cloves garlic
- 1 Tbls fresh chopped sage (or any other AIP spice)
- few pinches of salt
- Heat garlic and sage in a saucepan with olive oil on medium heat for 15 min. Don't let it get to a rolling boil, or it may make the garlic taste bitter. You are just heating to infuse the garlic and sage into the olive oil.
- Trim bottom of cauliflower to remove leaves and stem. Place on a cookie sheet and spoon the heated olive oil herb mixture over top. Sprinkle with salt.
- Bake at 350 for 90-100 minutes or until it is knife tender. I pulled out the cauliflower half way through baking and spooned some of the oil that had collected on the cookie sheet back on cauliflower.
- Slice to serve!
