Autoimmune Paleo Pulled Pork Tacos made with Paleo Wraps!
Happy Cinco de Mayo! This recipe has been in the works for a while now, but we pulled the video together in celebration of a fun holiday. We love tacos and miss eating corn tortillas. And while the standard AIP lettuce wrap works great, we love Paleo Wraps for tacos too! We thought to share our version of fancy AIP tacos with you. This is a great recipe to share with non-AIP folks. Just buy them the corn tortillas and use the same fillings as in this recipe.
If you have not tried using a pressure cooker for pulled pork, it is a super easy way to streamline cooking times. You go from six hours in the oven to just an hour on the stove top in a pressure cooker. We added a bright and crisp cilantro spiked slaw to liven up the pork and seasoned both the pork and the slaw with lime juice to brighten the whole thing up. The coconut sour cream is very easy to make. Take a can of coconut milk (We use Natural Value brand) and put in fridge overnight. Pull it out the next morning and remove lid. Carefully scoop all of the solid coconut cream, leaving behind the liquid coconut water. (I find the cream settles mostly at the top of the can) In a bowl, add 1 Tbls of apple cider vinegar to the coconut cream and mix. It is a great sour cream alternative!
